    love this recipe. I can't wait to try it. I can't believe all the time you've put into this! Any idea how to make a homemade equivalent of enchilada sauce to make it completely from food storage. And what about cheese? I'm really wanting to use powdered cheese, but don't know if that would work in this case. Ideas?

    My sister has tried this recipe http://allrecipes.com/Recipe/Enchilada-Sauce-2/... for the sauce. I haven't yet. Maybe that should be a challenge for me. Also I have not tried it with powdered cheese. I store shredded cheese in my freezer and "count " that as food storage. -Julie
