If you store in glass containers, this will still be an issue, but to a lesser degree.
As far as long term water storage containers go, Emergency Essentials www.beprepared.com sells a great set up using mylar bags with spouts that go inside of cardboard boxes for storing. They are 5 gallon in size and work just great!
Also, instead of using bleach to keep the water safe for long term storage, try using food grade hydrogen peroxide, but NOT the kind sold in the grocery, drug or Wal Mart stores as they all have unhealthy fillers added to them. A good source for H2O2 is through Guardian of Eden, www.dfwx.com/h2o2.htm I buy through them and have always found their product to be pure. And, my water when stored with hydrogen peroxide tastes fresh, even after a lenghty period of time.
I was wondering what container you were using to store your 72 hr. food in? It looks like a perfect fit. Is it a "costco" size animal cracker jug? And do you store all of those items in your black bin for each family member? I'm just looking for ideas on how to store for each member and yours looks perfect.
