That should be changed in the blog.  The instant yeasts actually keep much better frozen for long term storage.  I freeze it as soon as I buy it and keep it frozen after it's opened.  No problems - ever.  Love your site, by the way!!!  We're using a lot of your info in our classes on emergency storage. I'm gluten-free. I bake literally every bread the  kids &amp;amp; I eat. Once I open my yeast, it goes into the freezer.
