Food Storage Made Easy: The 7 Day Challenge: Day 6 (MONDAY)

  • Kemper · 2 months ago
This one is an easy one for my little family because this is how we eat. And is is a delicious recipe for a fantastic smoothie that is jam packed with healthy stuff. We call it "The Popeye Smoothie". 1 container of any flavor of yogurt, 1 large handful of raw spinach, 1 cup of frozen berries or other fruit, 1/4 cup milk. Blend it all together and enjoy. You won't even be able to taste the spinach. It might look a bit weird, but it is yummy and extremely healthy. And its a great way to eat those leafy greens.

Today is my surgery, so except for my regular v-8 fruit juice in the morning, I can't have anything to eat. I did make sure to have the menu set up for husband & daughter before I left for hospital. I'm not sure I'll be able to eat dinner. I may be too doped up to remember anything until tomorrow. However I am really loving these tests. It really shows my family just how prepared (or unprepared) we really are!

My dad had to go through exactly this since a quadruble bypass in January. He had to completely change the way he eats and so we did too. Ironically he decided to move in with us on Saturday and so we are having to be a lot more strict on our diets too.

I don't use my computer Friday-Sunday, so I missed those days. But, I must say, after looking at the challenges for those days, that you two are super! Those are very realistic challenges. I know lots of people who have been faced with these very challenges, especially since we lived in southern California for 7 years. Thank you for making this challenge so useful. :)

My husband is diabetic, so I know all about storing sugar-free/low fat foods. He has to make sure he gets enough roughage too. We all eat the same foods though. I just make sure that there are treats for those want something sweet. Managed to get my veg/fruit quota today as well.

My batchler Son was diagnosed diabetic a few months back and Mom had to help him figure out menu's for a while.

I cook nearly all of our meals from scratch. Seldom ever use a packaged anything except cake mixes and that is just for convience. Don't use a bread making machine either. I learned to make bread in a dishpan and I still do. Can even bake it in an Apple Boxd oven. Beans and Rice are a regular around our house and lentil soup makes a real good lunch. I put veggies in just about everything I cook and keep plenty of dried celery leaves on hand because I use(eat) lots of celery and save all the leaves and dry them myself. Have dried onions, green peppers and carrots too so throw them in everything. We do eat quite a bit of sugar for breakfast as a rule because we like whole wheat pancakes and home made jam or jelly. Also like the french toast made with my homemade bread and dried eggs. Right now we are enjoying all the fresh produce and fruit so we are getting more than 5 servings a day some days that's about all we eat. Winter time is a different story tho and I do have to watch and make sure I have those things in my storage that wil help me put 5 servings in the menu. Will have lots of squash stored and corn in the freezer which will help. Lots of canned tomatoes and green beans too. So we should be good to go. Oh yes another thing we eat lots of especially in winter is pickled beets and apple sauce. Both home canned of course. :)

Dorothy, I have never heard of dried eggs -- do you make your own or buy them? Thanks, Peggy

This is a really neat challenge for the day! Jodi & Julie, you are both very creative! We have loved doing these challenges this past few days. I love the challenge today! We unfortunately have to break the "no spending money" rule because we had a prior commitment with friends to celebrate a birthday by going to a brazilian bbq for lunch. It will be interesting to try and cut out a lot of the fat. I will have to eat leaner meats for lunch and load up on the salad bar. You can still eat healthy when you go out!

This is an easy challenge for us. We have been cooking from scratch for a while now to help with health issues. My mom says that I put to much work into feeding my family. Everything comes in a box now. My kids have had more energy and just love to have fresh things from home. I don't buy any store bought junk food anymore. They like the homemade goodies. Fruit smoothies are a great way to start off the day. I never thought of sneaking in some spinach. That is a great idea. Thanks.

This was an easy day for me, its how I eat normally. I am also glad we are getting close to soup season again. Its one of the things about fall and winter that I look forward too. I like my fresh fruits and veggies when they are in season, but I like when the cycle for soups comes back around too!

I can do this today. I have food stored just not water. This challenge has been fun and insitefull for me. Thank you!
  • mithreesons · 2 months ago
I need to use much less salt. We rely alot on pre-packaged foods that are loaded with sodium. I noticed that there was alot of sodium in some of my Mountain House foods too. I plan to print some new recipes for low salt and low fat cooking.

Every day is getting harder as I have less and less fresh food. I was late reading today's challenge and had already eaten breakfast and made my lunch. I will revisit these challenges again and try to be better prepared. Gosh, has this ever been eye-opening! Thanks Jodi and Julie!

Peggy; No I dont dry the eggs myself. I bought some from Emergency Essentials and also from Honeyville store. I use them a lot. I put them in my home made bread too. They seem a little spendy at first until you realize how many eggs are in that can, and 2 tablespoons full makes 1 extra large egg.

I have some of this and it is great for any baking.

Low salt & low fat has been my life for the last 5 yrs. What has been hard for the last 3 months is lowering my sugar. I have switched to aspertain & it is helping some. I still get cravings for cholocate and ice cream, esp cholocate ice cream. I work full time & my husband is retired. Evening meals tend to be something quick to eat, ecp on my days off. Than I try to make a large meal & put some up in the freezer to take to work. I have not bought anything since this has started & we still have a good supply with lots of choices. I have replaced the water I have used & added more. I found an extra item to store water. I have several camping insulated bottles for any for of liquids. I placed water in these along with all my empty canning jars. Thank for the suggestion. This has shone me what I need to improve on.

You may want to do some serious reserch on Aspertaim. I avoid that stuff like the plage.
  • LGCS · 2 months ago
I know but hope not to use to long just long enuff to get use to low sugar items.

I hope these tests stay up here for accessing after this week! I want to check and see how I do once I finish tweaking my supply to include what I should have included in the first place!

I love these challenges -- I have found several little things that I simply had not thought of -- thank you so much for helping me iron out the details.

My wife is a diabetic and this day was a snap. I did refill the water barrels though. We eat like this everyday. Low fat and low sugar.
  • KimL · 2 months ago
This was a good one for me because I was just diagnosed with two issues that require me to eat healthier and get more exercise. Definitely will need more variety in the food storage, especially for a crisis situation; adding more low-fat, low-sugar dessert/comfort foods. Thanks again for doing this!

This one was very easy for me, as we usually eat homemade and healthy. The only challenge was the lack of really fresh stuff from not being able to goo to the store all week. I think this is why I haven't done as well on some of the other challenges, because we do eat so many fresh foods, that it is hard to learn to cook from cans and storage (other than the store whole grains).
  • Linda Sorden · 2 months ago
I have gotten to be the quick and easy queen since the kids all left and it is just us. I had all the stuff and knew how to do it I have just gotten lazy. I vow to do better for "just us" It was fun to cook from scratch like I used to when we had less money and I worried more about good nutrition

For this day, and ALL days of the challenge: no spending money, no going to stores, and no restaurants.
    OK

You can’t use any pre-packaged or convenience foods
Hopefully, that doesn't include yoghurt, butter, max-packs of meat, bagged baby carrots....

Your breakfast has to be low sugar
Always is!! Plain yoghurt, banana, pineapple (fresh), strawberries. (2 servings fruit). Coffee (black). Toast with butter. Vitamins.

Your lunch has to be low fat (if you’re at work already, think about what you could have brought or made)
Usually is-- today's was. String cheese stick and apple. Tea (green, no sugar). Vitamins.

Your dinner has to be from scratch using whole grains and/or legumes
Brown/white rice mix. The rest of the teriyaki chicken. Baby carrots, celery sticks (raw). Vitamins. Lemonade (homemade, fresh squeezed; has some sugar-- 1/2 C in 1/2 gallon).

You have to have 3-5 servings of fruits and vegetables today
    Did that!

This was a good one for us, too. I have high cholesterol - a family legacy - and diabetis, so this is our life. (No high blood pressure, but we watch our salt as well.) Breakfast was granola and fresh raspberries with skim milk. Lunch was tuna sandwhich on 12 grain bread - lemon pepper instead of salt, with carrot sticks and V-8 type juice to drink. Dinner was Adzuki Bean Hotpot with celery, parsnips, sweet potato and tomatoes. Snacks are finger foods like raisins and nuts.

I tried really hard to do today's challenge, but my hubby is done. I did ok for breakfast and lunch, but dinner was pizza-hawaiian with pineapple. My storage really needs to be have more variety, we have been used to eating fresh fruits and veggies alot more.

This was no problem for my family, we usually eat really health anyway. We juice a lot of fruit and vegies during the day to get in our daily amounts. I found it hard the first day eating out of our 72 hr kits, I did not realize how much I would miss eating healthy.
  • lbrewer · 2 months ago
Healthy eating is not so hard for me since I enjoy the food and how it makes me feel. I made oatmeal for breakfast, had scrambled egg substitute (I freeze several cartons of eggbeaters), V-8 juice. Lunch was leftovers from Sunday Dinner. For dinner we had pinto beans that I had put in the crockpot before I left for work this morning. I highly recomend using the slow cooker, it is nice coming home to a meal ready to eat. We put some seasonings in the beans and ate them with wheat bread. Yummy and good for you too!

what can't we use the point system from weight watchers?
  • loretta · 2 months ago
I think we did okay with this. We try not to eat fatty, salty, sugary foods. I try to cook as fresh and healthy as possible. Am trying to get hubby to read food labels when he goes shopping.

If you do this challenge again, I'd like to beg for the form to be turned in through the next morning. I'm not a night person, and I only remembered to fill it out 2 times before bedtime. :(
